Duck Two Ways, Duck Sausage

Serves 10

  • 3 1/2 lbs. duck meat, small dice, chilled
  • 1 1/2 lbs. pork fat back (or other pork fat), small dice, chilled
  • 1 1/2 oz. kosher salt
  • 1/4 tsp. ground black pepper
  • 1/2 oz. honey
  • 1 1/2 oz. fresh thyme, finely chopped
  • 2 tsp. fresh rosemary, chopped
  • 4 tsp. fresh sage, chopped
  • 2 oz. fresh garlic, minced
  • 4 oz. shallots, minced
  • 2 oz. duck fat, rendered
  • Chicken stock, as needed
  • Hog casings (optional)

Combine duck meat and fat back with salt, pepper, honey and herbs. Sweat the garlic and shallots in the duck fat over low heat until tender. Drain off excess fat and chill the garlic and shallot mixture. When chilled, add to the meat. Grind the meat using a 1/4-inch plate of a meat grinder and place in a metal bowl over ice. Transfer the meat mixture to a mixing bowl and add just enough stock to lubricate the mixture. Mix on low speed for 20 seconds. The mixture is then ready for use or may be stuffed into the casings then air dried overnight and smoked the next day, if so desired.
