This season is filled with aromas and flavors that contribute to a festive mood. We all have our own culinary and olfactory associations that spark memories and feelings of celebrations and home.

“Cloves and cranberries are two of my favorite holiday smells that always seem to fill my mom’s kitchen, so I wanted to incorporate them into a refreshing holiday cocktail,” says Caitlin Corcoran, general manager and co-owner of Ça Va in Westport, an establishment dedicated to serving delicious Champagne, Prosecco and cava and creating innovative bubbly concoctions. This delightful sparkling martini known as Evergreen’s Delight is sure to be a hit for your own holiday festivities. Don’t let the extra step of making cranberry syrup or infused vodka be an obstacle.

Preparation can be done well in advance, allowing you to impress your friends with your effortless bartending skills. To start your party on the right foot, serve your guest a glass upon arrival.

Just be sure to make plenty—requests for a second glass are guaranteed. Evergreen’s Delight will be your favorite new addition to the scents and tastes that inspire your celebratory spirit. Let’s admit it—sometimes we need all the help we can get.

Evergreen’s Delight

1    oz. clove-infused vodka*
1    oz. cranberry syrup**
½    oz. Barolo Chinato (can be found at higher end liquor stores. Lillet Rouge would be an okay substitute)

Strain into a coupe glass. Top with:

2    oz. of Prosecco
Garnish with a rosemary sprig and dried cranberries
*Clove Vodka
1    bottle (750 ml) of vodka, Corcoran prefers J.Rieger & Co.
25   grams of lightly toasted cloves (a heaping ¼ cup)

Combine and let rest at room temperature for one hour, then strain out the cloves.

**Cranberry syrup
8    oz. cranberry juice
3    oz. orange juice
5    oz. sugar
1    bar spoon orange blossom water (about ½ teaspoon)

Stir ingredients together. Bring to a boil. Simmer and reduce for 30 minutes.
