Cioppino

Serves two

  • 2 4-oz. lobster tails
  • 8 16/20 count shrimp
  • ó c. olive oil, finely chopped
  • 1/4 c. white onion
  • 1 tsp. fresh garlic, finely chopped
  • 2 whole red chili peppers
  • 3 tomatoes, peeled
  • 1/4 c. clam juice
  • 8 oz. fresh fish, cubed
  • 8 10/12 count scallops
  • 10 mussels
  • 8 clams
  • 3 Tbs. butter
  • ó c. dry vermouth
  • 2 Tbs. fresh basil, chopped
  • 1 tsp. fresh fennel, chopped
  • ó tsp. fresh oregano, chopped
  • Lemon slice and parsley for garnish

Clean and butterfly the shrimp and lobster tails. In a sauce pan, heat the olive oil and add the onion, garlic and red chili peppers. Sauté until the onion clarifies. Crush the tomato into the oil then add the clam juice. Bring to a simmer then add all the seafood. Add the butter and the dry vermouth, basil, fennel and oregano. Simmer about 5 minutes or until seafood is cooked. Serve in a soup bowl and garnish with lemon slice and chopped parsley.
